I’ve been looking at these Oatmeal Crème Pies that I pinned
for a while now. I try to only pin the
things that I might actually do, so I decided to try my hand at these yummy
looking cookies. I followed the recipe
exactly as written. It was very easy.
This was my first time using parchment
paper. My beef with parchment paper is
that it’s wider than my pans, and I couldn’t get it to tear off right. I have this pic, but the paper was more
gnarled that it shows. Why don’t they
make this for the home sized pans? I
took to cutting it with scissors.
I also
tried to spray the pans with Pam, but the cookies stuck and broke even though
they were still warm when I got them off the pan. Anyway, the cookie baking went well—my small
scoop is 1 tablespoon-ish size, so they dropped well.
I then made the crème. I ran out and have to run to the store for more—I guess I used too much. Can you really have too much? So, when I get more marshmellow crème, I am going to make this batch a bit sweeter. This filling would also make fabulous icing – especially for some chocolate cupcakes! I would recommend making these to everyone!
